One week of vegan meals

My partner and I recently transitioned from a vegetarian to a vegan diet. Here is a list of our current recipes on rotation throughout the week, and our store cupboard essentials.
Breakfast
- BBC good food: Smoky beans on toast
- nora cooks: The best tofu scramble
- Simple porridge with fresh fruit - BBC has some good combinations here if you're wanting inspiration!
Lunch
- My own tofu, rice & beans
- plantbaes: High-protein vegan ‘marry me pasta’
Dinner
- COOKIE + kate: Homemade vegetarian chili (this has been a staple for us over many years, and it goes even better with air-fryer sweet potato wedges)
- BBC FOOD: Lentil bolognese (another long-time staple, we usually have this with a jacket potato and some greens instead of with pasta)
Side dishes
- Taste And See: Balsamic glazed brussel sprouts
- Live Eat Learn: Crispy air fryer kale chips
Snacks
- Piping Pot Curry: Air fryer pakora
